Blackberry & Brie

Ok, I tried the blackberry grilled cheese that went viral a few weeks ago with some store bought blackberries, but I decided to do it My way and I liked it so much better! I thought the jalepenos and Swiss cheese were a little much. I treated this one like a Monte Cristo with that little sprinkle of confectioners sugar that it NEEDS if you’re using fresh blackberries instead of jam.

2 slices of thick bacon
2 -40 calorie Brie triangles (Wee Brie)
1/2 cup of blackberries
1 leaf of chopped mint
Powdered Sugar for garnish

You could also drizzle honey inside if you want to avoid using the sugar.

Butter and grill as desired. I obviously used sourdough!

Watermelon Salad

I look so forward to this every summer!!

I’ve never been a fan of salt or really anything on Watermelon, but Fig Balsamic Glaze (reduction) is such a game changer. The fig is so sweet but it still has that delicious tangy vinegar flavor.

Do yourself a favor and give this a try. Add a little Feta (or goat cheese), Fresh Mint (chopped or muddled) and Fig Balsamic Glaze to your watermelies! It’s so refreshing! I even turned my husband into a fan, and he is very picky about his fruit. It’s our favorite pool snack!

5 ingredient | 1 Hr. Spaghetti Squash

Okay this is a very quick and easy recipe, but it’s one of my favorites.

Ingredients: Makes 2 servings.

  • 1 large Spaghetti Squash halved and seeds removed
  • 1/4 cup of Feta or any desired cheese
  • 1 can of low sodium Italian stewed tomatoes
  • 2 basil leaves chopped
  • A sprinkle of cayenne (optional)
  • Cracked Pepper

Preheat oven to 400F.

Drizzle or spray the inside of the squash halves with AVO oil, and place open side down on cast iron skillet or sheet pan. Bake for 45 minutes.

Turn squash over (keep in pan) and shred the squash gently with a fork. Add 1/2 can of stewed tomatoes onto each squash and return to oven for 10 minutes.

Add Feta, basil, cayenne and pepper to taste. Rotisserie Chicken is also a really good addition. Enjoy! 🤍

Summer Electrolyte Mock-Tail

This would also make a refreshing mixer with Rum or Vodka.

I had this today while I was laying out and it was so yummy! I tried to use the ingredients I had on hand that were highest in natural electrolytes. Enjoy!

Ingredients:

  • 8 ounces of Coconut Water
  • Juice of 1 lime
  • 6-8 oz of watermelon cubed (no seeds)
  • 2 Kiwi (peeled and cubed)

Blend well with ice (if desired). Garnish with sliced Cucumber, Strawberries, blueberries or Mint. 🥝🍉🥥

Jenny’s Favorite Roast

This is such and easy and delicious recipe:

Place beef roast and 1/2 stick of butter in crock pot with the fatty side down (initially). Cook for 2 hours on HIGH.

Flip Roast, drop to LOW and add all ingredients- Red Wine Vinegar, Onions, garlic, potatoes, gravy mix and water and herbs. Cook a remaining 6 hrs or until roast is tender and falling apart.

To thicken gravy (if needed), mix in a bit of cornstarch at the end. Salt and Pepper to taste!

Sourdough|Discard Pizza

Ok friends, I don’t have an exact recipe for this pizza crust but it seriously cannot be any easier.

This makes 3 medium sized pizzas. We made 2 mediums and 2 tiny ones.

Pop your cast iron pans (greased with olive oil) into the oven at 450 to preheat.

While it’s preheating take your sourdough starter and add about (I’m guessing- so just use your common sense) 3 cups of starter or leaven to a bowl and 2 cups of milk. Whisk well. If it feels too thin, you can add a little four or a little more starter. You want the consistency of thin pancake or crepe batter. Add some salt, garlic powder and a little Italian seasoning to taste.

When you pull out your cast iron pour the mixture into the pan and kind of roll it around until it starts to stick to the hot pan. It should be a thin layer of crust.

Now place the crust back in the oven for about 5-7 minutes. Pull it out and add your sauce and toppings.

We used Rao’s pizza sauce, 1 lb of cooked pork sausage, fresh basil, mozzarella and pepperoni.

Place back in the over for approx 15 minutes or until it’s nice and bubbly on top.

Slice and Enjoy!

Small Sourdough Boule

Proofing, Bulk Fermentation, and Cold Retard times are the same as usual.

So, this is the size I have been making for us recently and we just prefer it. It doesn’t make such large sandwich slices and I’d rather bake more often so it’s fresh. I tried to just half the ingredients of my normal loaves but then it was just a little too small for making sandwiches. This is perfect in my opinion! Enjoy!

Barbara Jean’s Meatloaf

Ingredients

  • 3 lbs ground beef 80/20
  • 1 large diced bell pepper
  • 1 diced sweet onion
  • 2 cup fresh bread crumbs (I used sourdough bread!)
  • 4 tbsp of mustard
  • 1/4 brown sugar
  • 4 large eggs, beaten
  • 1 tsp salt
  • 1 teaspoon ground black pepper
  • 1 tsp onion powder
  • 2 tbsp garlic powder

Glaze- (You’ll add this at the end)

  • 1/2 cup of ketchup
  • 3 tbsp mustard
  • 3 tbsp brown sugar
  • 1/2 cup of water
  • 1 tsp onion powder
  • 1 tsp garlic powder

Mix glaze toppings and set aside.-

Mix all ingredients for the meatloaf and place and shape into casserole dish. Press indentions throughout the meatloaf with your fingertips. (The sauce will fill them) Bake at 375 for 35 minutes. Drain and add the glaze evenly with a spoon or using a pastry brush.

Place back in oven and increase temp to 450. Bake for 15 minutes.

Garnish with parsley, basil or rosemary.

Serve with potatoes or any savory vegetables.

Simple Orange Sauce

I’m going to share this easy orange sauce because although it’s simple, it can be used for so many things.

Orange Roasted Chicken thighs with Brussels, onions and peppers over Jasmine rice- tossed with orange sauce.

Simply combine all ingredients into a saucepan and bring to a boil while stirring continuously, then drop to low and simmer until it’s a nice glaze.

  • 2 large oranges juiced, (about 1 cup) and a bit of zest if you like a little bitterness. You can also use store bought orange juice but it’s considerably sweeter.
  • 2 tsp lemon juice
  • 1/2 cup sugar or brown sugar
  • 4 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 2 tsp garlic powder
  • 2 tsp ground ginger
  • 3 tbsp cornstarch mixed well into 1/4 cup of water
  • A splash of sesame oil (optional)
  • A pinch of cayenne (optional)

My kids love orange chicken (the fried tempura chicken) and this is a great sauce. Sometimes I omit the garlic and ginger bc my kids don’t care for the heat. But it’s a great easy sauce. Enjoy!
